Our Catering Training Presentation is designed to help you educate your staff about catering for people on the gluten-freeWhen a food has less than 20 parts per million (ppm) of gluten so it is safe for people with coeliac disease to eat. diet. This tool is part of a package of information and materials aimed at improving knowledge and awareness across the catering sector.
We are collaborating with The Springboard Charity to develop a formal catering training educational resource. The tool will be primarily aimed at 16 to 25 year olds enrolled in catering colleges as well as applicable to a wider audience of working chefs.
The content will cover basics of coeliac diseaseA condition where a person is unable to eat gluten as it makes their body attack itself. and in-depth information on the glutenA protein that is found in the cereals wheat, barley and rye. -free diet, ways to avoid contamination, and tips on using different grains. Multimedia supplements will include an interactive knowledge quiz and cooking demonstration videos. A teacher’s guide will indicate which section of the tool is appropriate for specific diploma levels.
The Charity expects to launch the tool with all catering colleges and an extended stakeholderA person, group, system or organisation who affects or can be affected by an organisations actions. audience in September 2010 -just in time for the new school term!
