Juvela Tuscan Bean & Pasta Soup

After the indulgence of Christmas we all know we should be good but we still need comfort food to get us through the cold dark nights. Try this delicious filling soup - packed with pulses for a really hearty but healthy supper.

Ingredients:

1 tbsp Olive oil

1 Onion, peeled and finely chopped

2 Garlic cloves, peeled and crushed

2 tbsp Tomato puree

½ tbsp Fresh rosemary, finely chopped

1 x 400g tin Borlotti beans (or mixed beans)

Approx 1pt water

Salt and freshly ground black pepper

Method:

  1. Heat the oil in a large saucepan, add the onion and garlic and cook gently until soft.
  2. Stir in the tomato puree, rosemary, half of the beans and water. Season well and simmer gently for a few minutes.
  3. Blend the half of the beans in a blender or food processor until smooth and stir thoroughly into the soup.
  4. Add the Macaroni and cook for approximately 8-10 minutes until the pasta is cooked.
  5. Serve with shavings of Parmesan.
