Coeliac UK Youth Ambasador - Flying the nest on the gluten-free diet

Amanda Parker started volunteering for Coeliac UK over the summer of 2010 as the Charity’s Youth Ambassador. A keen campaigner with a true passion for food, Amanda used this role to give teenagers and young adults a voice.

Over the three month placement Amanda worked with staff in the office to develop several web pages sharing her tips for younger Members ready to start university or head off on their travels.  Having been diagnosed with coeliac diseaseA condition where a person is unable to eat gluten as it makes their body attack itself. just before going to University Amanda is no stranger to the conflicts which exist between making the most of student life and keeping to a strict gluten-freeWhen a food has less than 20 parts per million (ppm) of gluten so it is safe for people with coeliac disease to eat. diet.  In addition to using her own experiences she started discussions on the Charity’s Facebook page to find out how others found life with coeliac disease after leaving home and has fed the comments into her articles.  The results are three great pages which you can access in the Family and Friends section of the website, or from the links below:
