Coeliac UK and The Springboard Charity are working together to deliver an interactive educational tool to inform catering students about coeliac disease and the gluten-free diet.
The project will help meet Coeliac UK's strategic goal to make more caterers aware of gluten-free catering and improve the industry's competence in providing gluten-free food.
The Springboard Charity helps young, unemployed and disadvantaged people sustain a career in the industry. Springboard's resources and activities include specialist guidance and information through their website, helpline, careers materials, magazines, DVDs and one to one appointments.
The resource will include a virtual environment for students which will help them to interact and explore using tools such as quizzes, games, assignments, work sheets, role plays, presentations and questionnaires. There will also be video clips to demonstrate ways to minimise cross-contamination and cooking tips. Springboard will develop a teacher guide explaining how the resource can support units at various levels and meet objectives around standard curricula.
A tentative launch date of September 2010 is planned to broadcast the tool to all secondary schools and colleges in the UK.
