Coeliac UK reposted this
Continuing with my contributions to #coeliacawareness month, I wanted to share all the amazing food I have eaten since going #glutenfree both dining out and dining in! Being told you have to cut gluten out of your diet is a massive change which completely turned my world and many others upside down as food is fundamental and frequently ingrained in social events. And let’s be real it seems like gluten is in nearly everything! Eating out in many cases as a coeliac is also scary as there is a huge deficit in education on coeliac disease and the importance of avoiding #crosscontamination. The first picture is of me eating out gluten free for the first time since my diagnosis at PizzaExpress who were incredible with their knowledge and labelling. I felt so safe and hope in the future this will be the norm throughout the catering industry. It’s been a massive learning curve but the only thing I have to thank my coeliac disease for is throwing me in the deep end with cooking. Frequently gluten free products available are minimal, much more expensive and accessibility to convenience foods which are gluten free is limited. I remember making a lasagna and looking in 4 different shops for gluten free lasagna sheets - in the end I had to make my own! But since my diagnosis I have grown to enjoy cooking and often experiment with new recipes. So for anyone new to the diagnosis or being gluten free - it gets better I promise and there are tons of great resources out there including Coeliac UK. Just because something is gluten free doesn’t mean it can’t taste delicious!
