Starry Mince Pies

Unbelievably easy gluten free mince pies, made using the Schär multipurpose Mix It! available from Waitrose.

Ingredients

  • 200g Schar Mix it! Universal
  • 15g caster sugar 
  • 100g butter 
  • 1 medium egg 
  • 1-2 tbsp cold water 
  • 411g minced meat 
  • 1 (Bramley) apple 
  • 1 lemon zest 
  • 100ml orange juice

Method

  1. Pre heat oven to 180°C
  2. Place Mix it! and caster sugar in a bowl, cut the butter into cubes and rub into the Mix it!. Make a well in the centre and add the egg and water before stirring together to combine
  3. Hand bring the mixture together to form a ball
  4. Chill for 20 minutes before transferring to a work surface sprinkled with Mix it! and kneading for 1-2 minutes until pliable
  5. Roll out to desired thinness and cut with a cookie cutter to place in muffin tin
  6. Place the mincemeat in a jar and combine with grated apple, zest of 1/2 lemon and 100ml orange juice
  7. Fill pastry case with mincemeat mix and top with desired pastry, whether that be a full lid or shape
  8. Brush over with egg to provide colour during the bake
  9. Place in the oven for 15-20 minutes.
