Spicy Pizza Style Chicken

Something very simple to do for supper, this is a great first dish for children to cook and it’s healthier than many shop bought gluten free pizza bases. Feel free to swap out toppings for your favourites.”

Ingredients

  • 4 medium chicken breasts
  • 2 tsp olive oil
  • salt and pepper
  • 1 ball of mozzarella or 125g shredded mozzarella
For the Sauce
  • 100g sun dried tomatoes
  • 50g pitted black olives
  • 6-8 jalapeños from a jar
  • 1 tbsp olive oil
  • 20g fresh basil

Method

  1. Preheat the oven to 200°C/400°F/gas mark 6.
  2. Using a food processor or blender, combine all the sauce ingredients into a smooth paste. Add 2 tsp of the oil from the sun dried tomatoes and the jalapeños. You can chop up the tomatoes and jalapeños into small chunks if you don’t have a processor.
  3. Put the chicken breasts in a large sandwich bag and bash with a rolling pin until flattened evenly, to the same thickness as a normal pizza (about 1.5 centimeters).
  4. Brush a little oil on each side of the chicken breast and season with a sprinkle of salt and pepper.
  5. Spread about a tablespoon of the tomato mixture over each chicken breast, then slice/sprinkle the mozzarella on top.
  6. Bake in the oven for 15 minutes, until the chicken is cooked and the mozzarella is golden and bubbling on top. Let it cool a little before eating.
  7. Serve with chips or salad, or enjoy by itself for a tasty lunch.
