Gluten Free Classic Roast Potatoes

These crispy potatoes are what makes a Christmas dinner special. The duck fat and gluten- free flour guarantee you a great crispy coating.

Ingredients

  • 1kg Maris Piper or King Edward potatoes, peeled and cut to similar size pieces 
  • 4 tbsp duck fat 
  • 1 tbsp plain gluten free flour*
  • 1 tsp English mustard powder*
  • Salt

Method

  1. Heat the oven to 200°C, 400°F, gas mark 7.
  2. Cook the potatoes in a large pan of boiling water for 5 minutes. Drain well in a colander, then shake around to rough up the edges.
  3. Put the duck fat in a solid, shallow roasting tin and place the tin in the oven to heat up.
  4. Mix together the plain gluten-free flour and mustard powder, sprinkle over the potatoes and toss to coat. Tip the potatoes carefully into the hot fat and turn them over so each one is coated.
  5. Roast them in the oven for 50 minutes to 1 hour, turning them over halfway through so that they cook until crisp, golden and cooked through.
