Gluten Free Asian Slaw

A crunchy salad with a fresh and spicy dressing.

Ingredients

For the slaw
  • 2 carrots, peeled and grated 
  • ½ Chinese cabbage, shredded
  • 1 bunch spring onions, washed and sliced 
  • 1 red peppers, deseeded and sliced
  • 1 tbsp chopped mint
  • 1 tbsp chopped coriander
 
For the dressing
  • 1 lime, zested and juiced
  • 1½  tbsp oil
  • 1½  tbsp soy sauce
  • 1 large red chillies, deseeded and coarsely chopped
  • 1 clove garlic, finely chopped
  • 1 tsp fresh ginger, finely grated
  • Salt and pepper

Method

  1. Mix all the ingredients for the slaw in a large bowl
  2. Combine all the dressing ingredients
  3. Dress the salad to serve
