Fresh Tomato Soup

Ingredients

  • 900g (32oz) ripe tomatoes roughly chopped
  • 1 small onion chopped
  • 1 tbsp (15ml) vegetable oil
  • 1 sugar cube
  • 1 orange
  • 1.8 litres (3 pints) chicken or vegetable stock*
  • 2 cloves
  • bouquet garni (a bay leaf, a sprig of thyme and 3 stalks of parsley)
  • Fresh thyme leaves, to garnish

Method

  1. Soften the tomatoes and onion in the oil for about 8 minutes
  2. Rub the sugar cube over the orange peel, to absorb the zest, and add the sugar cube and remaining ingredients to the tomato mixture
  3. Bring to the boil, cover and simmer for 25 minutes
  4. Remove the cloves and bouquet garni
  5. Blend the soup in a liquidiser, then push with a wooden spoon through a fine sieve
  6. Reheat and serve garnished with a few thyme leaves.
