Sweet Grilled Polenta Slices

Ingredients

  • 500ml (18fl oz) milk
  • 250ml (9fl oz) water
  • ½ tsp salt
  • 2 tbsp sugar
  • 125g (4½oz) polenta or cornmeal*
  • 2 tbsp unsalted butter
  • Generous pinch each allspice, cloves and ginger

Method

  1. In a heavy saucepan combine milk, water, salt and 1 tbsp sugar and bring to boil
  2. Reduce heat and when simmering sprinkle in polenta in a slow, thin stream, whisking continuously to prevent lumps forming
  3. Reduce heat to very low
  4. Using a wooden spoon stir regularly every minute for 15-20 minutes or until mixture pulls away from the sides of the pan
  5. Stir in butter and spices
  6. Remove from heat
  7. Rinse a loaf pan with water and shake dry
  8. Spoon polenta into pan and smooth top
  9. Cover with a tea towel and let cool completely
  10. Can be refrigerated for 24 hours at this point
  11. Loosen with a knife and tip out onto cutting board
  12. Cut into 12 slices and let them dry on a rack for one hour
  13. Preheat grill and grill slices for 7 minutes on the first side or until golden
  14. Turn and sprinkle with reserved sugar
  15. Grill for 6 minutes, watching that the sugar does not burn
  16. Serve with stewed or canned fruit, if desired
