- 100g (3½oz) Lard/white fat
- handful of gluten free flour*

- Put the lard/white fat in the freezer until it is very cold but not frozen
- Once the lard/white fat is very cold, remove from the freezer and coarsely grate
- Sprinkle with gluten free flour to separate the pieces and use in your cooking as normal
