Spicy baked bean soup

Ingredients

  • 400g (14oz) can baked beans in tomato sauce*
  • 180g (6oz) can red kidney beans, drained
  • 1 onion
  • 1 red pepper
  • 250ml (½ pint) chicken stock*
  • ½ tsp crushed chillies
  • 1tsp olive oil

Method

1. Dice onion and peppers and sweat in a pan with oil until they start to soften
2. Add half a teaspoon of dried chilli flakes (according to taste)
3. Add baked beans, kidney beans and chicken stock and bring to the boil. Simmer for about 10 minutes over a low heat
