Banana Bread

Banana Bread

3 small ripe bananas

1½ cups of sugar

2 eggs

½ cup vegetable oil

2 cups flour (Doves Farm Gluten Free Plain flour works well)

1 teaspoon baking powder (check gluten free)

½ teaspoon salt

¼ cup + 1 tablespoon milk mixed with 1 tablespoon lemon juice (to sour, let stand 1 minute)

1 teaspoon vanilla

1 cup chopped pecans

 

Method

Preheat over to 325 or gas mark 3

In a large mixing bowl, mash bananas

Beat in sugar, eggs and oil

Sift together flour, baking power and salt.  Mix into batter with remaining ingredients

Pour into greased 9x5inch loaf pan.

Bake for 1 hour and 20-30mins, until golden brown and top splits.  (May need longer is using gluten free flour)

Cool on rack 20 minutes before removing from pan
