4oz margarine Glazing: Juice of 1 lemon
1 cup sugar ½ cup sugar
1½ cups Self raising flour (Doves Farm Gluten Free Self Raising Flour works well)
½ cup milk
Rind of 1 lemon
Cream margarine, sugar and lemon rind.
Beat in eggs, flour, milk and salt.
Pour mixture into greased 7” cake tin.
Bake gas 3-4 for about 1 hour
Glazing: Dissolve ½ cup sugar in lemon juice, pour syrup over hot cake and leave in tin until cold.
