Wendy's Chocolate Cake

Wendy's chocolate cake

A recipe enjoyed by members at our Cream Tea, made by committee member Wendy.


4oz/100g gluten free mix (Glutafin wheatfree white mix works well)
1tsp Gluten Free Baking Powder
1.5oz/40g cocoa powder
4oz/100g butter/soft margarine (some GF mixes specify butter)
8oz/200g soft brown sugar
2 eggs (beaten)
1tbsp milk


Line an oblong tin (11x7 inches/28x18cm) with baking paper

Preheat oven to 180 C

1. Cream together sugar and butter until fluffy
2. Beat in the eggs, a little at a time
3. Sift in all dry ingredients, folding together until smooth
4. Add milk to form a mixture that will easily fall from a spoon
5. Smooth mixture into the tin and put in oven

Bake for 35 minutes and allow to cool in tin

Decorate/ice as required.
