Ingredients
- 100g sultanas
- 150ml olive oil
- 200g caster sugar
- 2 eggs
- 350g plain gluten free flour *
- 1 tsp xanthan gum
- 1 tsp ground cinnamon
- 1½ tsp bicarbonate of soda
- ½ tsp cream of tartar
- ½ tsp salt
- 500g eating apples, skin on, grated.
- 1 lemon, zested

Method
Soak sultanas in warm water for 20 minutes.
Heat the oven to 180C/ 350F/ gas mark 4. Grease and line a 20cm cake tin.
Put the oil and caster sugar in a bowl, and beat to bring together. Then add the eggs one at a time and whisk so the mixture comes together. It should look a bit like mayonnaise.
In a separate bowl, sift together the gluten free flour, xanthan gum, cinnamon, bicarbonate of soda, cream of tartar and salt. Fold the dry mix into the oil and sugar mix using a metal spoon. Add the lemon zest and grated apple. Drain the sultanas and add to the mixture.
Spoon the apple cake mix into the greased and lined cake tin. Bake for 1 hour, or until the cake is cooked through. Test with a knife or cake tester so the middle comes out dry.
