An easy meatball traybake that’s sure to become a family favourite. Quick to prepare and full of flavour, it works just as well with or without the taco seasoning. Serve with rice or gluten free bread for a simple and satisfying meal.

Ingredients
- 500g beef mince (or beef and pork mince)
- 1 small onion, grated
- 1 clove garlic, minced
- 1 egg
- 50g gluten free breadcrumbs*
- 1 tsp dried oregano
- 1 tsp smoked paprika (optional)
- Salt
- Pepper
- ~ Taco Seasoning ~
- 1/2 tsp chilli powder
- 1/4 tsp salt
- 1/2 tsp ground cumin
- 2 cloves garlic
- 1/2 tsp dried oregano
- 1/2 tsp chilli flakes (optional)
- Tray
- 1 red pepper, sliced
- 1 green pepper, sliced
- 1 yellow pepper, sliced
- 1 red onion, peeled and cut into wedges
- 200g cherry tomatoes, halved
- 2 tbsp olive oil

Method
Preheat oven to 170°C fan/190°C /Gas Mark 5.
Mix all meatball ingredients together. Roll into balls or around 30g each.
Mix together all the spices for the taco seasoning.
Toss vegetables with oil and seasoning and spread on a large tray.
Places the meatballs between vegetables.
Bake 30 minutes until cooked through and the meatballs are caramelised.
