Gluten Free Apple and Almond Crumble

Apple crumble is a classic recipe. Bramley apples are in season now (February), so a perfect time to eat. The addition of almonds gives a source a source of calcium and iron.

Ingredients

For the filling
  • 3 (about 700g) Bramley apples 
  • 4 tablespoons (50g) caster sugar
  • 5 tablespoon water
For the topping
  • 150g gluten free plain white flour*
  • 50g ground almond 
  • 40g gluten free oatmeal* (optional, can use 40g extra gluten free flour instead) 
  • 50g demerara sugar (or brown sugar if you want a softer texture)
  • ½ teaspoon ground ginger
  • 100g butter
  • 30g flaked almonds (optional)

Method

  1. Preheat oven to 180C
  2. Peel and slice the apples and arrange in an oven proof dish. Sprinkle over caster sugar. Add 5 tablespoon water.
  3. In a separate bowl, mix together flour, ground almond, oatmeal, demerara sugar and ground ginger.
  4. Melt the butter (in pan or in the microwave)
  5. Pour butter into the dry ingredients and use a fork to mix. (It should be a crumbly texture that doesn’t stick together)
  6. Sprinkle the crumble topping over the fruit mix and level out. Sprinkle the almond flakes on top.
  7. Bake in preheated oven for 40mins, or until top is golden in colour.

Hints and tips:

If sensitive to gluten free oats you can omit the oatmeal and add more gluten free flour to get the correct consistency.
