Cracked Black Pepper Biscuits

These savoury biscuits are great with any cheese as a snack. Why not try with other flavours? for instance, try swapping the pepper for rosemary and sea salt, cheese and truffle oil, or fennel seeds.

Ingredients
- 125g gram flour*
- 25g ground flaxseed
- A pinch of baking powder*
- 1tsp olive oil
- 1/2tsp salt
- 1/2tsp cracked pepper
- 50ml water

Method
Combine all the ingredients in a large bowl and mix until a dough forms. If necessary, add more water or chickpea flour as needed until you have a pliable dough.
Sandwich the dough between two sheets of parchment paper and roll out – try to get the dough to be as thin as possible, approx. 3mm thick.
Cut into round fluted discs. Then, using a fork, poke holes into each cracker.
Bake at 170C/350F/Gas Mark 4 for 15 mins, until the edges are starting to brown and crackers are firm.
