You can never go wrong with a great and versatile homemade tomato base sauce. Use on its own with gluten free pasta, as a gluten free pizza topping, on gluten free bread, or as a base for stews, chillies or casseroles.

Ingredients
- 2 tbsp oil
- 2 onions, chopped
- 4 garlic cloves, crushed
- 2 tbsp tomato purée
- 400ml water
- 1 gluten free vegetable stock cube*
- 2 x 400g tinned chopped tomatoes
- 1 tsp dried oregano

Method
Heat the oil in a large saucepan. Add the onions and cook for 4 – 5 minutes on a low heat until soft.
Add the garlic and tomato purée. Cook for a few minutes then add the vegetable stock cube, water, chopped tomatoes and oregano. Season generously and gently simmer on a low heat for 20 minutes.
Use the sauce hot or chill it and use from the fridge for up to three days. Alternatively freeze it for up to three months. This sauce is great frozen into individual portions so it’s easy to use for single servings.
