Air fryer ham and cheese croquettes

Ingredients

  • 450 - 500g leftover mashed potato, cold
  • 60g ham, chopped 
  • 120g cheddar, grated 
  • Large handful of freshly chopped chives
  • 1tbsp dijon mustard
  • 2 tbsp gluten free plain flour*
  • Pinch of salt and pepper
  • 1 large egg, beaten
  • 50g of gluten free breadcrumbs*

Method

  1. Place the leftover mashed potato, ham, cheddar, chives, dijon mustard, gluten free flour, salt and pepper into a bowl and mix together until well combined.
  2. Separate the mixture into 8 portions (around 75g each). Roll them into smooth balls and then lightly flatten them so they are patty shaped. 
  3. Dip each into the beaten egg, followed by the gluten free breadcrumbs so they are well coated.
  4. Lightly spray the air fryer basket with a little oil and then placed the croquettes into the air fryer for about 10 -12 minutes at 180C , carefully flipping them half way through. You may need to do these in batches if your air fryer is smaller. Once done they will be golden and crisp with a fluffy centre.
  5. Finish with some more freshly chopped chives on top and serve hot alongside a fresh salad for a delicious lunch or light dinner.

Hints and tips:

If you don't have an air fryer, you can cook these in the oven. Just preheat the oven to 180C fan, spray the croquettes lightly with oil and bake until golden, or for about 15 - 20 minutes.
