
Air fryer ham and cheese croquettes

Ingredients
- 450 - 500g leftover mashed potato, cold
- 60g ham, chopped
- 120g cheddar, grated
- Large handful of freshly chopped chives
- 1tbsp dijon mustard
- 2 tbsp gluten free plain flour*
- Pinch of salt and pepper
- 1 large egg, beaten
- 50g of gluten free breadcrumbs*

Method
- Place the leftover mashed potato, ham, cheddar, chives, dijon mustard, gluten free flour, salt and pepper into a bowl and mix together until well combined.
- Separate the mixture into 8 portions (around 75g each). Roll them into smooth balls and then lightly flatten them so they are patty shaped.
- Dip each into the beaten egg, followed by the gluten free breadcrumbs so they are well coated.
- Lightly spray the air fryer basket with a little oil and then placed the croquettes into the air fryer for about 10 -12 minutes at 180C , carefully flipping them half way through. You may need to do these in batches if your air fryer is smaller. Once done they will be golden and crisp with a fluffy centre.
- Finish with some more freshly chopped chives on top and serve hot alongside a fresh salad for a delicious lunch or light dinner.
