Chef's Promise scones

Our Chef’s Promise scone mix has been created so that you can make scones which taste just as good as the gluten containing alternative. Whether you’re making sweet sultana, savoury cheese or plain scones, they are simple to make and delicious served warm. Enjoy your classic tea time treat by adding lashings of clotted cream and strawberry jam to your sweet scones. Cover your plain or cheese scones with salted butter for an extra burst of flavour. Ingredients

1kg scone mix makes approx. 24 scones
  • 1kg gluten free scone mix
  • 355g softened butter
  • 686ml whole milk
  • Optional: 245g sultanas or mature cheddar 

Method

  1. Place mix into a pastry mixer
  2. Add the softened butter and mix for one minute on a slow speed using the paddle attachment
  3. Add the milk and continue to mix on a slow speed for another minute, then increase the speed for ten seconds
  4. For sweet scones add 245g of sultanas, for savoury scones add 245g of extra mature cheddar. Mix slowly until ingredients are fully combined
  5. Rest the mix for 10-20 minutes before rolling out to a 20mm thickness
  6. Cut using a circular pastry cutter
  7. Bake at 175ºc. In a commercial oven bake for 15 minutes, in a domestic fan assisted oven bake for 30 minutes.
