Gluten Free Tomato and Pepper Gnocchi Bake

Ingredients

  • 2 tbsp oil
  • 1 onion, finely diced
  • 2 garlic cloves, crushed
  • 1 yellow pepper, sliced
  • 1 red peppers, sliced
  • ½ tsp chilli flakes (optional)
  • 1 tsp dried Italian herbs
  • 400g tinned chopped tomatoes
  • 50g mascarpone
  • 100ml milk
  • Salt and pepper to season
  • 500g gnocchi* or use our homemade gnocchi recipe
  • 50g pecorino or cheese of your choice

Method

  1. Heat the oil in a saucepan. Add the onions and cook for 5 minutes, without colour. Add the garlic and peppers and cook for a further 3-4 minutes. 
  2. Add the chilli flakes, Italian herbs, tinned tomatoes, and bring to the boil. Add the milk and mascarpone, season to taste. 
  3. To cook the gnocchi, place in boiling saltwater. Boil them for 1 minute, or until they float, then strain.
  4. Grease an ovenproof dish, add the gnocchi cover with sauce and top with cheese and grill for 5 minutes.
