Gluten Free Go Free Corn Flake Crusted Fish Tacos

We don't just do breakfast recipes! To add a little extra crunch to your next taco dinner, try coating some tasty white fish like cod or haddock with some crushed up golden gluten free cornflakes. Taco Tuesdays will never be the same again!

Ingredients

  • 200g Nestle GOFREE Corn Flakes, finely crushed
  • Grated peel of half a lemon
  • 400g firm white fish fillet, such as cod or haddock
  • 1 egg, lightly whisked
  • 20g butter
  • Olive oil
To serve:
  • Corn tortillas*
  • Ripe avocado
  • Lemon wedges
  • Small gem lettuce

Method

1. Prepare your fish by slicing it into goujon sized pieces
2. Take two large bowls. In the first, whisk your egg.  In the second, place your Nestle GOFREE Corn Flakes and combine with the grated lemon zest
3. Dip your fish goujons into the egg and then immediately coat in the cornflakes mixture
4. Melt the butter in a large frying pan over a medium heat, along with a drizzle of olive oil
5. Fry the goujons until golden and cooked through (approximately 4 minutes)
 
To serve:
 
- Heat your tortillas according to the packet instructions and then layer them up with a leaf of gem lettuce, goujons, mashed avocado and a lemon wedge
