Gluten Free Walker’s Shortbread Peanut Butter Energy Bites

These delightful energy bites are a perfect blend of rich peanut butter and the classic taste of Walker’s all-butter Shortbread, all while being gluten-free. They make a great snack for a quick energy boost and are easy to prepare.

  • 150g Walkers’ Gluten Free Shortbread Rounds 
  • 100g Gluten Free Rolled Oats 
  • 50g flax seed 
  • 75g honey 
  • 150g peanut butter*
  • 100g milk chocolate chips*

1. Create Shortbread Crumbs: 
Add the Walker’s Gluten Free Shortbread Rounds to a food processor or blender and blitz until you have fine crumbs, then set aside. 
2. Mix Ingredients: 
In a large mixing bowl, combine the oats, flaxseed, shortbread crumbs, peanut butter, honey, and milk chocolate chips. Mix well until you have a thick, uniform mixture. 
3. Form Energy Bites: 
Using your hands, take a small handful of the mixture and roll it into golf ball-sized balls. 
4. Store and Enjoy: 
Place the energy bites in a container and store them in the fridge. These energy bites are not only delicious but also packed with protein and healthy fats, making them a convenient option for an on-the-go snack. Enjoy!
