
Cinnamon Butter French Toast With Maple Syrup Drizzle & Berries

Ingredients
For the French Toast:
4 thick slices of Naturally Genius Tiger Bloomer
2 large eggs
120ml milk (can be dairy or alternative milk) *
1 tsp vanilla extract
1 ½ tsp ground cinnamon
1 tbsp brown sugar (optional, for extra sweetness)
Pinch of salt
1–2 tbsp butter (for frying)
For the Cinnamon Butter:
50g unsalted butter, softened
1 tsp ground cinnamon
1 tbsp maple syrup or brown sugar
Maple Syrup Drizzle:
2 tbsp pure maple syrup
For Serving:
Fresh mixed berries (strawberries, raspberries, blueberries)
Extra maple syrup, for drizzling
A dusting of icing sugar

Method
1. Make the Cinnamon Butter
In a small bowl, mash together the softened butter, cinnamon, and maple syrup until smooth and then set aside.
2. Prepare the Egg Mixture
In a shallow dish, whisk together eggs, milk, vanilla, cinnamon, sugar, and salt.
Slice your Naturally Genius Tiger Bloomer into thick slices (around 2.5–3 cm).
Dip each slice into the mixture, turning to coat well. Let it soak for 10-15 seconds per side.
3. Cook the French Toast
Heat a large non-stick pan over a medium heat and melt your butter.
Add the soaked bread slices and cook for 2–3 minutes per side until golden brown and slightly crisp at the edges.
Brush or dollop a little cinnamon butter on each slice while still warm.
4. Assemble & Serve
Stack or layer the cinnamon butter French toast on a plate.
Drizzle with warm maple syrup.
Scatter with fresh berries.
Dust lightly with icing sugar.
Serve with the pot of maple syrup for extra drizzling.
