
Cinnamon Apple Pancakes
Breakfast is the most important meal of the day, and Pancake Day is the perfect excuse to enjoy it in a different way. A simple bowl of gluten free oats can easily be turned into a stack of fluffy gluten free pancakes. These pancakes are simple to make and ideal for sharing with friends and family. For this recipe, use PureOaty gluten free porridge oats to blend into a fine oat flour before cooking.

Ingredients
- 150g PureOaty gluten free porridge oats (blended into oat flour)
- 2 eggs
- 160ml PureOaty Creamy & Enriched oat drink
- ½ tsp gluten free baking powder*
- 1 tsp cinnamon
- 1 tbsp maple syrup
For the caramelised apple topping:
- 1 red apple
- 2 tbsp maple syrup
- 1 tbsp coconut oil
- 1 tsp cinnamon

Method
- Blend your oats into a fine oat flour and add this to your bowl. Add in the rest of the pancake mixture ingredients and mix into a smooth batter. Pour the mixture into a lightly greased pan and cook for a few minutes on each side until golden brown.
- For your caramelised apple topping, add the coconut oil, maple syrup and cinnamon to a pan. Melt the coconut oil and mix this well. Add the chopped apple to this mixture and cook until the apple is coated in the caramelised sauce. Do not cook this on a high heat as it will burn easily.
- Stack your pancakes high, add a few spoonfuls of the caramelised apples and add a sprinkling of PureOaty gluten & nut free granola for some extra crunch! Enjoy!
