Courgette and feta pasta

To make it lactose free, omit to use feta cheese

Serves 4

Ingredients

  • 400g (14oz) gluten free pasta*
  • 1 tbsp (15ml) olive oil
  • 2 onions, sliced
  • 2 red peppers, deseeded and sliced
  • 1 clove garlic, crushed
  • 2 courgettes, thinly sliced
  • 200g (8oz) baby spinach
  • 2 tsp (10g) frozen, dried or fresh basil, chopped
  • 300g (10oz) feta cheese, cubed

Method

  1. Cook the pasta in boiling salted water for ten minutes or according to the pack instructions
  2. Heat the oil in a frying pan and add the onions and peppers, cooking for five minutes, add the garlic and cook for further two minutes
  3. Add the spinach, courgettes and basil and cook for a further two minutes
  4. Drain the pasta in a colander and add it to the spinach mixture and cook for a further minute
  5. Mix in feta cheese and serve.
