Fruit and seed balls

Ingredients

  • 4 tbsp sesame seeds
  • 4 tbsp sunflower seeds
  • 4 tbsp pumpkin seeds
  • 350g mixed dried fruit (try dates, apricots, peaches and figs)
  • 3 tbsp pure orange juice
  • 1 tsp powdered cinnamon
  • pinch of freshly grated nutmeg
  • pinch of powdered cloves
  • 25g/1oz grated desiccated coconut

Method

1.       Blitz the seeds to a fine consistency in a blender.
2.       Add dried fruit to the blender and grind this to a fine consistency, gradually adding just enough orange juice to bind the mixture, without making it runny.
3.       Mix in the cinnamon, nutmeg, and cloves.
4.       Form the mixture into 25 small balls and roll in coconut.
5.       Chill well to let the balls firm up before serving.
