Daura Märzen Cake

Ingredients

  • 250g rice flour
  • 50g pure cocoa powder
  • 200g whole cane sugar
  • 150ml sunflower oil
  • 15g yeast
  • 150ml Daura Märzen beer
  • 150ml soy milk
  • 1 tablespoon apple vinegar
For the marmalade:
  • 500g berries
  • Agave syrup
  • Juice of half a lemon
For the vegan cream cheese:
  • 250g vegan cream cheese
  • Juice and zest of half a lemon
  • Agave syrup
  • 250g vegan margarine

Method

  1. Preheat oven to 170ºC
  2. Mix the soy milk with a tablespoon of apple vinegar, add the oil and beat it
  3. Mix the rest of the liquids from the ingredients’ list and beat them with a wire whisk
  4. Mix the rice flour, cocoa powder, yeast and whole cane sugar.
  5. Mix both parts slowly
  6. Pour the mix in the mould and leave in the oven for 30-45 minutes and then store it in the fridge
  7. Mix the margarine with the vegan cheese, the lemon juice and the agave syrup
  8. Finally, freeze the result and spread it over the cake when ready!
