Nature's Path O'Jacks

Finding a great gluten free breakfast on teh go can be difficult, but this fresh take on a flapjack from Nature's Path will keep you full until lunch

Ingredients

  • 4 tbsp golden syrup
  • 25g butter
  • 100g Nature's Path O's
  • 75g dried figs, roughly chopped
  • 25g dried cranberries, roughly chopped
  • 50g dried apricots, roughly chopped
  • 50g fresh blueberries
  • 2 tbsp pumpkin seeds
  • 2 tbsp sesame seeds

Method

  1. Place syrup and butter in a small microwaveable bowl and heat together on the medium/high setting for about 1 minute or until butter has melted. Place the O's, figs, cranberries, apricots, blueberries and seeds into a large bowl and mix together
  2. Add the melted syrup and butter to the bowl of O's and mix together really well to coat and combine all the ingredients
  3. Place in a 20 x 31cm approx rectangular baking tin (about 3cm deep) lined with non stick baking paper. Add the mixture and press into the tin. Take a further piece of baking paper, place over the mixture and then firmly press all over and push into all corners and firm together
  4. Place in a preheated oven 180C/350F/Gas Mark 4 for about 15 minutes or until starting to brown and go sticky. Remove from the oven and allow to cool
  5. Chill in fridge before cutting into about 15 chunks to eat.
