Reduced Sugar Peach and Raspberry Layered Fruit Fool

This no-added-refined sugar dessert it is a family favourite. You can layer the creamy filling with the fruit sauce, or fold it through. You can change this with any fresh or tinned fruit in juice.

Ingredients

  • 1 tin of peach halves in natural juice
  • 200g fresh raspberries
  • 200g double cream
  • 200g Greek yogurt
  • 25g flaked almonds, toasted (optional)

Method

  1. Drain the peaches. Remove 4 peach-halves. Cover and reserve them. Then place the rest of the peaches into a food blender.
  2. Wash the raspberries and place half of them into the blender with the peaches. Cover and reserve the rest.
  3. Blend the raspberries and peaches in the blender to make the fruit sauce. After that, transfer it to a bowl and reserve until needed. 
  4. Next, empty the yoghurt and cream into a mixer, and whisk together until it forms peaks. 
  5. Take four glasses. Place a spoon of the fruit sauce into the bottom of each glass. Top with the cream and yogurt, then more sauce, and some of the reserved fruit. 
  6. Repeat until all the cream filling, sauce, and fruit are used up.
  7. Cover each glass with clingfilm and chill until needed.
  8. Serve from the fridge, with flaked toasted almonds if you wish.
