Spiced Chickpea Stew

This easy spiced chickpea stew is one of our favourite go-to dinners and goes beautifully with gluten free pasta. If you're not in a hurry, you can simply put all the ingredients into a slow cooker and cook on a high setting for two hours.

Ingredients

  • 1 tbsp oil
  • 1 red pepper, 1cm diced 
  • 2 sweet potatoes, peeled and 1cm diced
  • 400g chickpeas, tinned
  • 1 tsp paprika 
  • 1 tsp cumin
  • 1/2 batch of base tomato sauce
  • Salt and pepper to taste

Method

  1. Heat the oil in a saucepan. 
  2. Add the diced red pepper and sweet potatoes and cook for 3 - 4 minutes.
  3. Add the chickpeas and spices and cook for about a minute until fragrant.
  4. Add the base tomato sauce, cover and gently simmer for 20 - 25 minutes, stirring occasionally.
  5. Season to taste with salt and pepper and serve.
