Gluten Free Protein Bread with Goji Berries

Those of us who don’t eat gluten never have to miss out on the delight that is warm, freshly baked bread. This light, fluffy bread makes delicious sandwiches and great toast! The seeds give it that extra crunch, and some added nutrients. Another bonus of baking your bread is that you know exactly what’s gone into it, with no nasty additives or preservatives. It’s so simple to make in the Panasonic breadmaker.

Ingredients

For the dough
  • 450g low fat curd or quark*
  • 7 eggs
  • 75g seed  and kernel mixture 
  • 150g ground flaxseed
  • 75g soaked goji berries
  • 150g ground almonds
  • 75g gluten free oat bran*
  • 45g corn flour
  • 2tsp salt
  • 21g baking powder*
For the topping
  • 20g seed and kernel mixture

Method

  1. Soak the goji berries in water for around 5 minutes and then drain them well.
  2. Take the bread pan with the kneading blade out of the breadmaker and add in all the ingredients except for the topping. 
  3. Place the bread pan back into the breadmaker, close the lid, select menu “Gluten Free bread” press start.
  4. After around 10 - 15 min of mixing, press stop and add the topping. Press start and bake the bread for around 1 h 30 min.
