Pork, Walnut and Stilton Sausage Roll

Ingredients

  • 12 good quality pork and herb sausages- skinned*
  • 50g (1½oz) toasted walnuts chopped
  • 150g (5½oz) stilton, crumbled
  • Handful of chopped fresh flat leaf parsley
  • 500g (18oz) gluten free puff pastry*
  • 1 egg
  • Butter for greasing
  • Gluten free flour to dust the roll*

Method

  1. Place the sausage meat into a large bowl
  2. Add the nuts, cheese and parsley
  3. Knead with your hands, mixing well
  4. Roll the pastry on a lightly floured* surface. Cut into strips
  5. Divide the sausage mix into 6 and shape each piece into a long sausage- the length of the pastry strip
  6. Lay one long sausage along the centre of the pastry strip
  7. Brush one edge of the pastry strip with the beaten egg, then fold over the other side and seal with a fork
  8. Cut each strip into 7 pieces
  9. Put onto a baking sheet, brush with beaten egg and place in a preheated oven at 220°C/425°F/Gas Mark 7
  10. Cook for 20- 25 minutes until golden brown
  11. Serve hot or cold!
