Chocolate Mousse

Ingredients

  • 6oz (175g) dark chocolate, broken into pieces*
  • 2 tbsp (30g) strong black coffee
  • 4 eggs (separated)
  • 1 tbsp (15ml) rum or brandy

Method

  1. Place the chocolate and coffee in a heatproof bowl over a pan of simmering water until the chocolate melts, stirring occasionally
  2. Remove from the heat and leave to cool for 2-3 minutes
  3. Beat the egg yolks and gradually add to the chocolate
  4. Stir in the rum or brandy
  5. Beat the egg whites until they form soft peaks and gently fold into the chocolate mixture until thoroughly combined
  6. Spoon into 4 individual glasses or serving bowls and chill for several hours (preferably overnight)
  7. If you wish, these can be topped with a few raspberries, a fanned strawberry or orange segments before serving.
