Great way to use leftover turkey!

Ingredients

  • 454g (16oz) leftover cooked turkey meat, chopped
  • 454g (16oz) boiled potatoes, mashed
  • 1 finely chopped onion
  • 227g (8oz) green peppers
  • 90g (3oz) gluten free breadcrumbs*
  • 1 tsp (5ml) salt
  • 1 tsp (5ml) black pepper
  • 1 egg
  • 30ml (1fl oz) olive oil

Method

  1. Put the turkey, potatoes, onion, salt and pepper into a food processor and process for 2 minutes until all ingredients are well mixed and become dough like
  2. Form into burger like shapes and coat in egg
  3. Coat in the breadcrumbs until completely covered.
  4. Fry in the oil or grill until golden
  5. Serve with leafy salad and cherry tomatoes
