Turkey meatloaf

Ingredients

  • 4 tbsp (60ml) quinoa
  • 125ml (5fl oz) water
  • 1 tsp (5ml) olive oil
  • 2 small onion, chopped
  • 2 large garlic cloves, finely chopped
  • 50g (2oz) spinach
  • 500g (16oz) minced turkey
  • 1 tbsp (15ml) tomato puree
  • 2 tbsp (30ml) Worcestershire sauce
  • 1 tsp (5ml) curry powder*
  • 1 egg
  • 1 tsp (5ml) salt

Method

  1. Bring the quinoa and water to the boil in a saucepan and simmer until quinoa is tender and water has been absorbed, about 15-20 minutes. Set aside to cool
  2. Prepare a 2lb loaf tin by lining it with tin foil
  3. Preheat oven to 180°C/350°F/Gas Mark 4
  4. Heat the olive oil in a frying pan, stir in the onion;cook and stir until the onion has softened and turned translucent, about 5 minutes. Add the garlic and cook for another minute; add spinach and cook for a couple of minutes until wilted. Remove from heat to cool
  5. Mix together all ingredients until well combined and transfer to the prepared tin
  6. Bake in the preheated oven for about 50 minutes, until no longer pink in the middle
