Muffins

Ingredients

  • 230g (8oz) gluten free self-raising flour*
  • 115g (4oz) caster sugar
  • 1 tsp (5g) baking powder*
  • 115g (4oz) raisins
  • ½ tsp mixed spice*
  • 1 tsp (5ml) vanilla extract
  • 115ml (4fl oz) vegetable/rapeseed oil
  • 2 large eggs
  • 150ml (5fl oz) water

Method

  1. Put all the dry ingredients in a bowl and mix together
  2. Add the vanilla, vegetable oil, water and eggs together and beat
  3. Put the wet and dry ingredients together and mix thoroughly
  4. Put into muffin cases in a muffin tin
  5. Bake in the oven at 180°C/350°F/Gas Mark 4 for approximately 20 minutes.
