Bruschetta Toppings

These toppings are great with our gluten free baguette recipe. Slice the baguettes into 1 cm slices, then drizzle with a little olive oil and bake in a moderate oven for 10 minutes until toasted. If you love garlic, feel free to rub a fresh clove over the bread, once toasted. Then top with one or all of the toppings below. Why not try all three recipes as great canapes, or as a sharing starter board for a party!

Ingredients

  • 100g (3½oz) cherry tomatoes
  • 6 basil leaves
  • 2 spring onions
  • 1 clove garlic, crushed
  • 10ml (2 tsp) olive oil
  • Salt and pepper to season
  • 12 slices of baguette

Method

  1. Cut the cherry tomatoes into quarters, and place in a bowl
  2. Chop the basil, and slice the spring onions, and add both of these to the tomatoes 
  3. Add the garlic and a drizzle of olive oil to combine the flavours
  4. Season to taste, and then place on top of the bruschetta bread pieces.
