A simple salad with the classic Greek flavours of feta cheese & olives

Ingredients

  • 250g (9oz) bag fresh salad
  • 6 spring onions, finely sliced
  • 1 green pepper, finely sliced
  • 8 radishes, quartered
  • 100g (3½oz) feta cheese (vegetarian if required)
  • 12 black olives
  • 3 tbsp (45ml) olive oil
  • 1 tbsp (15ml) tarragon vinegar
  • Salt and freshly ground black pepper

Method

  1. Arrange the salad on a large plate and top with the onions, pepper and radishes
  2. Crumble over the feta cheese and add the olives
  3. Mix the dressing ingredients together and pour over the salad just before serving.
