Gluten Free Flatbread

Flat bread is a great quick bread to make and perfect as a lunch time snack. This is a great base recipe. Feel free to flavour your dough with onion seeds, cumin seeds, garlic or rosemary.

Ingredients

  • 400g (14oz) gluten free self-raising flour, plus extra for dusting*
  • 1 tsp (5g) baking powder*
  • 1 tsp (5g) salt
  • 300ml (11fl oz) natural yogurt
  • 50ml (1½fl oz) olive oil
  • 50ml (1½fl oz) water

Method

  1. Heat the grill to a medium heat
  2. Mix the flour and baking powder in a bowl, then season with the salt. Stir in the yogurt, olive oil, and water.  Mix well to form a soft dough
  3. Divide the dough into eight equal pieces, then shape into circles or ovals about ½cm thick. Dust lightly with a little extra gluten free flour. Slightly flour a baking tray then place four of the breads on it.  Cook under the grill for 3-5 mins on each side until golden and puffed. Repeat with the last four
  4. Serve warm.
