Mincemeat muffins

Makes 12 large or 30 mini muffins
A simple muffin with a festive twist – easy to make, bake and freeze

Before you start, pre heat the oven to 190oC/375oF/gas mark 5


  • 100g (4 oz) soft margarine
  • 100g(4 oz) caster sugar
  • 1 tsp vanilla essence
  • 200g (8 oz) Juvela gluten free mix
  • 1 tsp baking powder (gluten free)
  • ½ tsp mixed spice
  • 4 medium eggs, beaten
  • 6 tbsp mincemeat (gluten free)


  1. Mix together all the ingredients until light and fluffy
  2. Divide between muffin cases and bake in a pre-heated oven for 15-20 minutes until golden and firm to touch.
